Week 6: A technique you’re intimated by - gluten free phyllo pastry (and baklava)
I live with two people who are gluten free. I’m not sure intimated is quite the right word to describe how I feel about gluten free baking. Daunted is probably more accurate - so much work for often disappointing results!
This week seemed like a good excuse to try a new gf baking recipe. There are always a few on my “want to try” list.
The recipe was fun to make. I followed the phyllo and baklava recipes from The Very Hungry Coeliac by Melanie Persson. This is not quite like the gluten version, a bit thicker and crunchier than it should be. But still delicious flavours and spices.
